Marinated the Chicken in soy sauce, sake and sugar for 2 days, sear on both sides and then finish in oven at 350 F.

Preparation:
Make Yuzu sugar syrup Combine equal parts sugar and water Add Yuzu (pomelo) pulps Bring everything to a simmer Filter and set the liquid aside till room temperature Prepare sweet potato chunks Peel your sweet potatoes and cube them into 1/2’’ x 1/2’’ x 3’’ pieces Soak them in your Yuzu sugar syrup overnight
Cooking:
Take out the soaked sweet potato chunks and deep fry at 350 Fahrenheit till half cooked (3-5mins) Lay the sweet potato chunks out on a tray lined with parchment paper, hold in the freezer for 1 hour Re-fry at 350 Fahrenheit till crispy and golden
By adding Yuzu pulps to the syrup, you are giving this simple dish a refreshing Japanese twist and a little acidity to balance out the sweetness. Serve this instead of mashed potatoes, you will wow your family and friends at this year’s Christmas table.
